Instant Pot Asian Beef Noodle Soup

This is one of my favourite easy go-to recipes if I am craving noodles & soup! There’s quite a few spices but once you have everything prepped - it’s SUPER easy to make over and over again!

Prep time: 20 minutes | Cook time: 1 hr 15 mins | Yields 4 servings

Ingredients:

  • 1 whole onion

  • 1 bunch of green onion

  • Cilantro

  • Ginger

  • 4 cloves of garlic

  • 2 star anise

  • Pinch of coriander seeds

  • Pinch of black peppercorns

  • 2 packages of oxtail (with bone)

  • Chinese 5 spice

  • 4 cloves

  • Dash of Mirin

  • Dash of soy sauce

  • 1 tablespoon of miso paste

  • Vegetable oil

  • 1 stick of raw cinnamon

  • 1 tablespoon of brown sugar

  • Noodles

  • 4 cups of water, filtered

Instructions:

  1. Boil a pot of water & blanch the oxtail, drain & set aside

  2. In the Instant Pot, turn on the Sauté option & add the vegetable oil until it covers the bottom

  3. Cut up the onion (halves) and add them into the Instant pot, add the garlic & ginger (ginger you can add however much you want, to taste)

  4. Wash & cut off the ends of the green onion, add to the Sauté medley

  5. Add all of the spices (cinnamon, coriander seeds, peppercorns, cloves, star anise, 5 spice) into the mix

  6. Stir the Instant Pot & let the onion brown on the edges, add a dash of Mirin, brown sugar, miso paste

  7. Add the blanched oxtail into the Instant pot, stir about a minute & then add filtered water

  8. Close the Instant Pot & change the setting to “Pressure Cook” - make sure it is on “High” and set for 45 minutes

  9. Once the 45 minutes is up, let the pressure release

  10. Boil water & cook your noodles

  11. Open up the Instant Pot & pour the pot of soup & ingredients through a strainer & into another stove top pot

  12. Strain & compost all the solids minus the oxtail

  13. Put the noodles in the bowls first, add oxtail & garnish with additional chopped green onion, cilantro, sesame seeds for your own preference, add a dash of soy sauce to taste.
